  • Prep: Gently clean the oyster mushrooms with a paper towel (do not wash). Trim off the tough bottom ends, then use your hands to separate large clusters into wide, flat pieces.
  • Make the wet mixture: In a large bowl, whisk together the unsweetened almond milk and rice vinegar to create the wet ingredient mixture.
  • Prepare the coating: Set up two bowls, one with cornstarch, and one with rice flour, garlic powder, onion powder, salt, and black pepper.
  • Coat the mushrooms: Dip each mushroom piece into the wet ingredient mixture, letting excess drip off. Lightly coat in cornstarch, dip back into the wet mixture, then press into the seasoned rice flour until fully coated. Place on a plate as you work.
  • Preheat the air fryer: Preheat to 400°F (204°C) for 5 minutes. Spray the air fryer basket with cooking spray.
  • Air fry: Arrange the mushrooms in a single layer without overlapping. Spray the tops evenly with cooking spray, making sure there are no dry white spots.
  • Cook: Air fry at 380°F (193°C) for 10 minutes. Flip the mushrooms, spray lightly again, then air fry for another 6–8 minutes until golden and crispy. Check at 6 minutes. Cook in two separate batches.
  • Cool slightly: Transfer the fried mushrooms to a cooling rack while you finish the second batch.
  • Serve: Enjoy immediately while hot and crispy, with your favorite sauce on the side or extra lemon wedges.
