For the tofu

  • ½ block extra-firm tofu drained, pressed, and cut into cubes
  • 1 tablespoon kecap manis

For the nasi goreng sauce

  • 2 tablespoons kecap manis
  • 2 tablespoons light soy sauce
  • 2 teaspoons sambal oelek

For the fried rice

  • 2 tablespoons neutral cooking oil divided
  • 1 medium sweet onion chopped
  • 3 garlic cloves minced
  • 1 medium carrot chopped into small pieces
  • ½ cup green peas
  • ½ cup corn
  • 3 cups cold cooked rice preferably day-old
  • 1 green onion spring onion, sliced

Instructions

  • Season the tofu: Toss the tofu cubes with kecap manis in a small bowl. This coats the tofu with a sweet, savory flavor that blends perfectly into the fried rice later.
  • Sear the tofu: Heat a little oil in a large non-stick pan. Once the pan is hot, add the tofu and let it sear for a few minutes until golden and lightly crisp, giving it a gentle toss halfway through. Set the tofu aside when done.
  • Prepare the sauce: While the tofu cooks, whisk together the kecap manis, soy sauce, and sambal oelek in a separate bowl. This simple stir-fry sauce creates that bold, classic nasi goreng flavor.
  • Sauté the aromatics: Add a bit more oil to the same pan and sauté the chopped onion for a couple of minutes until it turns soft and translucent. Stir in the garlic and cook until fragrant, for about one minute.
  • Cook the carrot: Add the diced carrot to the pan and let it cook for a few more minutes, until it starts to soften and blend with the aromatics.
  • Bring everything together: Now add the peas, corn, cooked rice, and the browned tofu back into the pan. Pour in the sauce, toss everything well, and stir-fry for a few minutes until the rice is hot and evenly coated.
  • Finish and serve: Remove the pan from the heat and stir in the chopped green onion for a fresh, bright finish. Taste and adjust the salt if needed, then serve your vegan nasi goreng warm with lime wedges, if desired.
