  • Sauté the onion: Heat a tablespoon of oil in a large non-stick pan or wok over medium heat. Add the diced sweet onion and cook until it becomes soft and translucent, about 2–3 minutes.
  • Add the garlic: Stir in the minced garlic and sauté for about a minute, until fragrant.
  • Cook the frozen vegetables: Add the frozen mixed vegetables and turn the heat up to high. Sauté for a couple of minutes until the veggies are fully thawed and any excess liquid has evaporated.
  • Stir in the rice and seasonings: Mix in the cooked rice along with the light soy sauce, sesame oil, oyster sauce, and a pinch of salt. Stir-fry everything together for a few minutes until the rice is hot and well-coated with the seasonings.
  • Finish with green onion: Remove the pan from the heat and fold in the chopped green onion for a pop of fresh flavor. Serve and enjoy!
